Mountains of fall-apart slow smoked pork shoulder. Put it on some bread, put it in a bun, put it in your face hole.
Juicy homemade pork sausages with chunks of garlic, jalapeno, and sharp cheddar. Served with pickles & onions. Deemed the ETB Action Sausage. There's a picture of them in the background of this page (not actual size, but close)
Portobello (not a meat)
Giant caps of goodness, with just the right amount of smoke and spice. Served with pickles & onions. Humanely raised.
Seasoned & marinated reverse-seared tri-tip (it's beef) cooked medium rare and sliced up for eating pleasure.
Marinated chicken breasts seasoned & smoked over apple wood until they're friggin good.
Sweet & Tangy Slaw
Midwest meets Carolina. Nothing all that fancy, just good slaw.
With chunks of smoked meat. A nice balance of smokey and spicy. My neighbors seem to like these.
Smoked Pork Green Chili
Hatch green chilis, chipotles, and chunks of smoked pork.
A giant pulled pork sammich with crispy crumbled bacon, sweet & spicy pickles, provolone cheese, pickled red onions, and ETB Action Sauce on a toasted brioche bun.

Diablo and a Doc
Diablo Sammich is a dang pulled pork monstrosity with sliced ETB Action Sausage, provolone, and smothered in smoked pork green chili. Brioche bun is somewhere in there. Comes with a Dr. Pepper. And I make it fast 'cause I know you're in a goddamn hurry.
