These are my favs. Baby Back Pork Ribs *$30ish/rack Just a different cut than the StL Style. Generally shorter and chunkier. Pulled Pork *$8ish/lb, sando Mountains of fall-apart slow smoked pork shoulder. Put it on some bread, put it in a bun, put it in your face hole. Sausages *$5ish/link Juicy homemade pork sausages with chunks of garlic, jalapeno, and sharp cheddar. Served with pickles & onions. Deemed the ETB Action Sausage. There's a picture of them in the background of this page (not actual size, but close) Portobello (not a meat) *$5ish/cap Giant caps of goodness, with just the right amount of smoke and spice. Served with pickles & onions. Humanely raised. Vinny Wings *$15ish/doz Drummies & flats, seasoned perfectly, seared, smoked. No deep frying here, sorry. Reg, Buffalo, or ETB Sauced. THE SIDES *$8ish Sweet & Tangy Slaw Midwest meets Carolina. Nothing all that fancy, just good slaw. Neighborhood Beans With chunks of smoked meat. A nice balance of smokey and spicy. My neighbors seem to like these. Smoked Pork Green Chili Hatch green chilis, chipotles, and chunks of smoked pork. SAMMICHES (they're obnoxiously big) Thunder Pig *$10ish A giant pulled pork sammich with crispy peppered bacon, sweet & spicy pickles, provolone cheese, pickled red onions, and ETB Action Sauce on a toasted brioche bun. Thunder Pig Deluxe *$14ish Same as above, just add sausage and slaw. E-Man *$14ish A Sammich loaded with brisket, 2 onion rings, provolone cheese, and Action Sauce on a toasted brioche bun. A total copycat of the famous Z-Man from Joe's KC. Diablo and a Doc *$14ish Diablo Sammich is a dang pulled pork monstrosity with sliced ETB Action Sausage, provolone, and smothered in smoked pork green chili. Brioche bun is somewhere in there.
